Vietnamese food might be divided into three categories, which pertain to a specific region. Northern Vietnamese cooking may be simple. Southern Vietnamese cooking may have a French influence. Recipes from Vietnamese include many vegetables, herbs and spices, which also includes lemon grass, lime and kaffir lime, a Southeastern Asian citrus fruit. Vegetarian Buddhist dishes might also be a number of Vietnamese cuisines. Meats have been known to be apart of the Vietnamese food such as pork, beef, prawns and various kinds of tropical fish and chicken. Duck might not be used as much.
